  • 2 cups white rice, medium grain, uncooked
  • 1 (15 oz.) can green pigeon peas
  • ½ tbsp. Sazón Completa (or ½ package of any seasoning with achiote)
  • 4 oz. tomato sauce
  • 1 teaspoon chicken bouillon
  • 2 tablespoons sofrito sauce
  • ½ tsp garlic cumin
  • 2 cups water
  • 2 tablespoons olive oil, or achiote oil
  • 2 teaspoons adobo seasoning
  • 3 cups water
  • 2 teaspoons salt

Arroz con Gandules is one of Puerto Rico’s signature rice dishes. It features yellow rice, gandules (pigeon peas) and pork, cooked together in the same pot. The key to the dish is Puerto Rican sofrito, an aromatic sauce made with tomato, garlic, onion, and peppers. Arroz con Gandules is a basic but yummy dish that’s easy to make and can be enjoyed year round. Gandules can be found in many Sedano’s  Supermarkets.

  1. Heat oil in a saucepan over medium-high heat. Cook peppers and onions until vegetables are soft and translucent, for about 10 minutes. Add Sazón, garlic, cilantro and oregano. Cook for one more minute.
  2. Add the rice to pan. Stir with a wooden spoon and cook until toasted, for about 2 minutes. Add the pigeon peas, tomato sauce, and 1½ cups water. Bring to a boil, then lower the heat to medium-low and continue cooking until the water has evaporated and the rice is tender (about 10 minutes). Stir rice so it does not stick to the bottom.
  3. Remove saucepan from heat and let stand for 5 minutes before serving. Enjoy!
