Ingredients

List of Ingredients
  • 1 ½ pounds of medium shrimp, cut into small pieces 
  • Juice of 4 medium limes
  • 1 cup of tomatoes, diced
  • 3/4 cup of cilantro, chopped
  • 2/3 cup of pineapple, diced
  • 2/3 cup of mango, diced
  • 1 avocado, diced
  • 1/2 cup of white onion, diced
  • 1 1/2 tbsp of garlic, minced
  • 3/4 tsp of salt

Directions:

 

In a large bowl, mix the shrimp and lime juice. Let sit in the fridge for 30 minutes, until the shrimp appears white. While the shrimp marinades, in a separate bowl stir together all of the ingredients, except the avocado. Cover and refrigerate until ready to use. 

Once the shrimp is ready, drain the lime juice and add the shrimp and the avocado into the bowl and stir. Season to taste with salt and pepper, and plate. Enjoy!
